They used to keep large 'matkas' - earthen pots full of ice on carts and have the kulfis in aluminum cans inside it. Instructions to make Malai Ice-cream/Kulfi:
  1. Cook the milk in a heavy base pan or in an iron walk till it reduces to less than half. It will take 12-15 min. Then add malai, sugar, milk powder, cardamon powder, some dry fruits, Kesar leaves & cook for another 5 mins.
  2. Slow the flame. Take 1/2 cup ready hot milk & add wheat flour into the cup. Now mix properly so that no lumps can form.
  3. Add this mixture to the cooking liquid. After 1 min liquid will become thick. Turn off the gas & wait for the mixture cool down.
  4. Take the mixture in a grinder and grind it for 1-2 min. Now pour the mixture in Kulfi molds or any airtight container, cover it with foil paper & freeze for 2 hours.
  5. After 2 hours again grind the mixture and pour to the container, do topping with some chopped dry fruits, cover with foil paper and freeze it for 6-7 hours.
  6. Note- Milkmaid can be used instead of malai & milk powder.

Many a times, eggs are also added to create an ice cream. Kulfi, on the other hand is cooked for long and not churned at all. Using reduced fat milk will cause ice crystals to form when you freeze your kulfi and won't give you the same rich, creamy taste as whole milk. A wide pot will give the milk more surface area and may speed up the process. Combine evaporated milk, condensed milk and whipped topping in a blender and blend in pieces of bread until smooth.
