  4. After 7-8 minutes, when Gobhi becomes soft, turn off the gas & drain out all the water from Gobhi & let it cool down.
  5. Meanwhile, take a bow, add Pakora Ingredients in it & mix them properly before adding water in it.
  6. Now slowly-slowly start adding water in it so that no lumps are formed in the batter.
  7. Keep stirring the batter for 4-5 minutes, it’s consistency will become thick, then let the batter rest for 10 minutes.
  8. Now grind all Gobhi marination ingredients into fine chutney in a mixer grinder.
  9. Then apply chutney properly on boiled Gobhi florets with 1 Table Spoon Besan so that chutney sticks to the Gobhi properly.
  10. Let the marinated Gobhi rest for 10 minutes.
  11. Then after 10 minutes, check batters consistency, it will become more thick.
  12. Now remember to make pakora’s crispy, it’s important to fry them 2 times, first on medium flame to set the Besan coating, then cooling them down & then frying them for 2 time on high flame so that it’s outer layer becomes crispy & Gobhi becomes more soft from inside.
  13. Then take a kadhai, add oil in it & keep the gas on medium flame.
  14. When oil gets heated up, dip marinated Gobhi florets in batter, coat them properly & put them in the oil.
  15. Fry them for 2-3 minutes, till it’s Besan coating is set properly.
  16. After 2-3 minutes, turn off the flame, take them out & let them cool down before second frying.
  17. After some time, again turn on the gas & keep it on high flame.
  18. Then add half fried Gobhi pakora’s in it & fry them for 1-2 minutes till they become golden brown in colour.
  19. After 1-2 minutes, when they turn into golden brown in colour, turn off the gas 4 take them out in a plate.
